Light Sautéed Baby Artichokes – Quick Recipe

Sautéed Baby Artichokes

optional: half a glass of white wine (or plant-based milk) to evaporate during cooking.

  • 1 clove garlic
  • 2 tablespoons extra virgin olive oil
  • to taste water (about 4 oz)
  • to taste salt
  • to taste parsley (dried or fresh and chopped)

  • Pan of appropriate size (with lid)

Sautéed Baby Artichokes

  • How to clean the baby artichokes?

    To clean artichokes, use latex gloves to avoid staining your hands.

    Remove the outer and tougher leaves of the baby artichokes until you reach the light ones, cut off the spiky tip. Use a knife to clean the stem.

    The artichoke heart must be cleaned of any internal fuzz.

    Cut the artichoke hearts in half or into four parts, depending on their size.

    How to cook very small artichokes?

    Soak the artichokes in water with lemon juice to prevent them from blackening. If you clean and cook them immediately, you can skip this step.

    Place the artichokes in a single layer in a pan and cook them with a drizzle of extra virgin olive oil and garlic. Sauté them for a few minutes. If desired, deglaze with white wine or plant-based milk.

    Then add water to cover them halfway and simmer for about 20 minutes covered. If the water reduces, add more hot water.

    Season to taste with: vegetable bouillon, mixed herbs, curry. Cover and cook over medium-low heat.

    At the end of cooking, uncover them, let them dry out, and adjust the salt.

    Finally, sprinkle with chopped parsley and serve the sautéed baby artichokes hot.
