Simple and Tasty Pumpkin Fritters

The simple and tasty pumpkin fritters are perfect for an appetizer, a buffet dinner or to get children to eat vegetables.

These pumpkin fritters are prepared in no time and can be cooked in a pan or on a grill or in the oven, if you prefer, you can also fry them.

A very simple batter for these pumpkin fritters that we cooked in a pan with a bit of extra virgin olive oil to avoid frying them, and they were devoured.

Ingredients for Simple and Tasty Pumpkin Fritters

  • 1 lb pumpkin
  • 2 eggs (medium)
  • 2/3 cup grated Parmigiano
  • 1/3 cup all-purpose flour
  • 1 clove garlic
  • 2 pinches salt
  • 1 tsp thyme
  • to taste black pepper
  • to taste extra virgin olive oil

Preparation of Simple Pumpkin Fritters

  • To prepare the Simple Pumpkin Fritters, first clean the pumpkin by removing the skin, seeds, and internal filaments.

  • Cut it into slices of about 3/4 inch then into cubes, peel the garlic clove, and crush it with the back of a knife.

  • In a pan, heat a bit of extra virgin olive oil with the garlic clove, and when it starts to sizzle, add the pumpkin cubes, salt, and stir.

  • Cover the pan with the lid and cook the pumpkin cubes over low heat, it will take about 10 minutes.

  • If you prefer, you can bake them for 15 minutes at 356°F in static mode on a baking tray covered with parchment paper and drizzled with a little extra virgin olive oil.

  • Once the pumpkin is cooked, mash it into a puree with a fork and let it cool.

  • Now you can add the eggs, grated cheese, and flour, adjust the salt if necessary, and season with ground black pepper and thyme.

  • Mix well to combine everything, and in the same pan where you cooked the pumpkin, add a bit more extra virgin olive oil and heat it.

  • Scoop the mixture with a spoon and let it slide into the now-hot pan, using a second spoon to help.

    Flatten them well if the simple and tasty pumpkin fritters remain too high and cook them for 3 minutes on one side.

  • Gently flip them with a spatula and cook on the other side until golden brown.

    Serve them piping hot.

  • If you prefer, you can bake the pumpkin fritters by simply covering a baking tray with wet and squeezed parchment paper.

  • Place the mixture in small heaps and flatten them with the back of a spoon, drizzle with very little extra virgin olive oil.

  • Bake them at 356°F in static mode for 18/20 minutes.

  • If you like fried food, you can fry them by dropping them simply into a pan with a finger of hot frying oil.

  • Once golden on one side, gently flip them with a skimmer and once completely golden, drain them on kitchen paper.
