Ingredients
- 4 potatoes
- 3/4 cups carrots
- 3/4 cups peas
- 3/4 cups green beans
- 1 cup pickled vegetables (in vinegar)
- 1 tbsp lemon juice
- 7/8 cup mayonnaise
- 2 tsp fine salt
- 6 slices cooked ham
- 1 cube gelatin
Tools
- Pot
- Kitchen scale
- Bowl
- Cutting board
- Loaf pan
- Plastic wrap
Steps
Boil the potatoes, peel them, mash them with a potato masher, and dice one. Cook carrots and green beans and dice them. Pour into a bowl the peas (I used canned peas from a good brand), carrots, green beans, and chopped pickles which I rinse very well to remove the strong vinegar taste.
Add the mashed potatoes to the mixture and a pinch of salt. Mix well and add the mayonnaise that we prepared in advance and kept in the fridge. Lay the slices of cooked ham on the cutting board, trim the edges and if they are too large, cut them in half, place a few spoonfuls of Russian salad in the middle and roll them, trying not to break the slices. Place all the rolls neatly aligned in a loaf pan lined with plastic wrap to facilitate removal.
Prepare the gelatin following the instructions on the package and let it cool. Once it has slightly cooled, pour it over the Russian salad rolls. The level should be a finger above and around. Refrigerate and serve when everything is very cold.
Can the gelatin be omitted from the recipe?
Sure, if you don’t like it, the rolls can be presented naturally.
