The Fennel, Orange, and Bean Salad is a perfect fresh and vegetarian mix that you can quickly make if you use canned beans.

Ingredients for Fennel, Orange, and Bean Salad
- 2 fennel bulbs
- 14 oz oranges
- 10.5 oz fresh borlotti beans (or frozen or canned)
- 2.5 oz green olives (pitted)
- 3 tbsps extra virgin olive oil
- 2 pinches salt
- to taste black pepper
- 1 sprig chives
How to Prepare Fennel, Orange, and Bean Salad
Among the ingredients, I’ve listed the cooking time for fresh beans, but if you use dried ones, you’ll know they need to be soaked overnight and cooked for at least 1 hour.
If you have fresh or frozen beans, bring a pot of water to boil (unsalted), add the beans, and cook for 30 minutes.
Obviously, if you use canned beans, this step is unnecessary.
To prepare the Bean Salad with Orange and Fennel, peel the oranges removing the white skin and slice them thinly.
Wash the fennel, remove any leaves and the outer part if it’s too tough, and slice them using a mandoline.
Assemble the Fennel Salad by placing all the ingredients in a bowl, mix well, and check the salt.
The bean salad with fennel and oranges is ready to be served at the table.
