Ingredients
- 1 3/4 cups all-purpose flour
- 1 cup chestnut flour (sifted)
- 14 tbsps butter
- 1 egg (medium)
- 1 egg yolk
- 1 cup powdered sugar
- 1 tsp lemon zest (grated)
- Half vanilla bean
- 1 pinch fine salt

Steps
If you want to work by hand, pour the powdered sugar with the softened butter, the seeds from half the vanilla bean, and the grated lemon zest into a bowl. Once the mixture resembles breadcrumbs, add the whole egg and the yolk. Once combined, add the two mixed flours and the pinch of salt. Make sure there are no lumps in the chestnut flour. Form a dough and let it rest for 30 minutes in the fridge wrapped in plastic wrap. You can use the same method with a stand mixer using the hook attachment. After resting, you can use it for making cookies or pie crusts. These quantities (696 grams) will be enough for 25-30 cookies or a 10-inch round tart shell for 6 people plus decorations if desired for a tart.
Storage
The Shortcrust Pastry with Chestnut Flour can be stored for a few days in the refrigerator wrapped in plastic wrap.
