Ingredients for Pumpkin, Raspberry, and Arugula Salad
- 1 lb pumpkin (your preferred variety)
- 3.5 oz arugula
- 7 oz bitto cheese (or other mountain cheese)
- 1.75 oz raspberries
- 1 oz peeled almonds (whole or sliced)
- 1/2 teaspoon ground cinnamon
- 2 pinches salt
- to taste black pepper
- to taste extra virgin olive oil

Preparation of Pumpkin Salad with Raspberries and Cheese
First, to prepare the Pumpkin Salad with Raspberries and Arugula, peel the pumpkin and remove the seeds and inner filaments.
Cut it into not too small cubes and steam it with the basket or in the microwave.
For the microwave, just place the pumpkin in a Pyrex bowl, add 1 tablespoon of water, cover with plastic wrap, and cook on high power for 3 minutes.
Once the pumpkin is cooked, let it cool slightly, in the meantime wash and dry the arugula and raspberries.
Cut the cheese into cubes and then put the vegetables, raspberries, and cheese in a large salad bowl.
Add whole almonds (if small) or sliced, season with salt, pepper, ground cinnamon, and extra virgin olive oil.
Mix the Pumpkin, Raspberry, and Arugula Salad very gently and serve.
