Carnival is a time of year when the most delicious sweets like frappe, castagnole and many other Carnival sweets are prepared, each more delicious than the last. Donuts, like bomboloni, are part of these fabulous sweets but like all traditional recipes, there are different versions to make fried donuts from the classic Roman donuts to the quick orange donuts.

To make the recipe for super soft fried donuts, I used the same dough as the super soft castagnole with potatoes and ricotta without yeast. You just have to mix all the ingredients, shape the donuts, fry them, and roll them in sugar with the famous final trick that makes them soft even the next day.

Ingredients

  • 3.5 oz ricotta
  • 3.5 oz potatoes (boiled)
  • 1.4 oz sugar
  • 1 egg
  • 1 orange zest (grated)
  • 4 tablespoons orange juice
  • 1.8 oz butter (soft)
  • 9.9 oz all-purpose flour
  • Half packet baking powder
  • orange juice (for coating)
  • sugar (for coating)
  • sunflower oil (for frying)

Steps

LET’S PREPARE THE FRIED DONUTS

  • To make the donuts, follow this recipe

    Roll out the dough, it should not be thin otherwise the donuts will be very flat, with a round cookie cutter, cut out several circles, I used a small round cutter because I wanted to make small donuts so decide the size of the cutter you prefer. Once you have cut out the circles, make a hole in the center, I used the back of a wooden spoon. Heat the oil well, if you have a thermometer let it reach 320°F, otherwise, do the test with the handle of a wooden spoon, if it bubbles when immersed in the oil, then the oil is ready for frying. Fry a few donuts at a time, drain them on absorbent paper, and before coating them in sugar, dip them in orange juice and then toss them in sugar. This is the trick to keep them soft even the next day, otherwise, pass them immediately in sugar. Enjoy them and taste the delight.

Seal the donuts well in a plastic bag so they keep well or you can freeze them and take them out a few minutes before reheating in the oven
