COLD MIXED GRAIN SALAD

While shopping at the Ipercoop in Castenaso, a small town near Bologna, I found a ready-made bag of mixed grains and today I prepared a cold mixed grain salad with oats, spelt, and barley!

We don’t often eat grains and we eat legumes even less, and I know this is not the right behavior because these very ingredients are recommended for getting fibers and proteins to eat healthier.

I added some fresh salmon fillets, corn, pitted Taggiasca olives, and some cherry tomatoes which are always in the kitchen!

The cold rice salad, pasta, grains, legumes are one of the most consumed summer dishes because we can, indeed, we must make it in advance, we can season it with many ingredients like fresh, boiled, grilled, or sautéed vegetables, and then cheeses, pickles, and “leftovers”.

Ingredients COLD MIXED GRAIN SALAD

  • 17.6 oz mixed grains (Coop ready-made package)
  • 7 oz salmon fillet
  • 5.3 oz sweet canned corn, drained
  • 20 cherry tomatoes
  • 20 Taggiasca olives (pitted for me ALDI brand)
  • to taste basil
  • to taste salt
  • to taste pepper

Steps

  • 1) First, I boil the mixed grains for the time indicated on the package, which is 10 minutes from boiling for me.

    2) Meanwhile, I wash and cut the cherry tomatoes in half.

    3) On a non-stick pan or grill, I cook the salmon fillet and once cold, I cut it into cubes about 1 cm square (approx. 0.39 inches).

    4) I drain the grains once cooked and after cooling them quickly under a stream of cold water, I pour them into a bowl.

    5) Then I add the drained corn, pitted Taggiasca olives, and chopped cherry tomatoes.

    6) I also add the cooked fresh salmon cut into cubes, basil, and adjust everything with salt and pepper.

    7) Good oil as the last seasoning, and after mixing it well, I put the cold mixed grain salad in the fridge to let the flavors blend and develop in the dish.

This dressing is quite delicate, so if you want to make it stronger, add some capers and sun-dried tomatoes in oil!

If you want to flavor the cold summer salad of SPELT, BARLEY, OATS, serve it with a sauce like mayonnaise, tartar, or with yogurt or labna!
