Dark chocolate cream is a thick chocolate cream with an intense and enveloping flavor like chocolate custard. Creams are a basic recipe in pastry, made with a base of English cream that is then enriched with the chosen flavor. It is a very versatile cream, easy to prepare, and can be used to fill profiteroles, prepare semifreddos, or garnish cakes or spoon desserts. It can be lightened with whipped cream if we want a fluffier cream and can be made with dark, milk, or even white chocolate.
I preferred to use dark chocolate, by far my favorite, and I struggled not to finish it by the spoonful. Prepare it the day before because resting in the fridge is essential for the cream to turn out perfectly. Let’s get to work and prepare the dark chocolate cream together.

Ingredients for preparing the dark chocolate cream
- 0.85 cup Heavy cream
- 0.85 cup whole milk
- 4 egg yolks
- 0.5 cup sugar
- 7 oz dark chocolate
- 1 teaspoon vanilla extract

Preparation of dark chocolate cream
In a saucepan, put the milk, cream, and vanilla extract. On very low heat, bring it almost to a boil. Meanwhile, beat the egg yolks with the sugar to obtain a cream. When the milk and cream are almost boiling, add the egg mixture, and always stirring, on very low heat, cook until the cream coats the spoon.
At this point, the English cream is ready and can already be enjoyed as is, flavored with vanilla or lemon once cooled. To get the creamy texture, break the dark chocolate into small pieces, I used 70% cocoa chocolate, but if you prefer a milder flavor, 50% cocoa will do.
As soon as the English cream is removed from the heat, add all the chocolate pieces and mix very well with a whisk or use an immersion blender to incorporate more air if preferred. Let cool covered with film and place in the refrigerator until the next day.
