The bacon and cheese stuffed potatoes are a tasty and flavorful dish that also requires a quick oven finish and is delicious even at room temperature.
I usually prepare stuffed vegetables such as stuffed tomatoes (read → https://blog.giallozafferano.it/asilannablu/pomodori-ripieni-di-riso/) or rice-stuffed vegetables Greek-style or gemista (see → https://blog.giallozafferano.it/asilannablu/ricetta-verdure-ripiene-di-riso-alla-greca-gemista/) but this recipe for potatoes stuffed with cheese and bacon is a delicious side dish we enjoyed last night for dinner!
This is a recipe that can be flavored and varied in many ways — I give you some tasty ideas in the notes just below the recipe instructions.

Ingredients BACON AND CHEESE STUFFED POTATOES
- 4 potatoes
- 6 oz cream cheese (spreadable fresh cheese)
- 2 oz bacon, diced
- 1 oz grated Grana Padano (about 1 oz)
- to taste salt
- to taste pepper
- to taste parsley
- to taste extra virgin olive oil

Steps
1) To prepare this delicious recipe for creamy stuffed potatoes the first thing to do is… wash and boil the potatoes with the skin on for about 20 minutes.
2) After this time, check the potato with a skewer by piercing it: if the skewer goes in effortlessly, turn off the heat and let the potatoes cool, or rather, become lukewarm.
3) Using a spoon, gently scoop out part of the boiled potato flesh, taking care not to break the shell, which will be the base we will then generously fill.
4) Collect the scooped potato flesh in a bowl and add the cream cheese, mixing until the mixture is a little grainy, seasoning with salt and pepper.
5) In a small skillet over high heat, sauté the bacon cubes until they become crisp but not dry!
6) Once cooled, add them to the potato and cheese mixture and adjust the seasoning of the potato filling.
7) Now fill the hollows of the potatoes and sprinkle the grated Grana Padano on each, finishing with a pinch of chopped parsley.
8) Place the stuffed potatoes with cheese and bacon on a baking tray lightly brushed with EVO oil or lined with parchment paper and bake at 392°F (200°C) to let the flavors melt and combine for about 25 minutes: all ingredients are already cooked so it won’t take long!
9) When baking is complete, let the bacon and cheese stuffed potatoes cool a bit and you’re ready to taste the recipe!
