The pumpkin chips are crunchy chips baked in the oven. They can be made with thin slices of pumpkin (with or without its skin, as you prefer) or with only the pumpkin skin. Amazing, one leads to another, they seem fried but are light and with few calories.
HARVEST of #pumpkin – they start being harvested at the end of August and the harvest continues until the beginning of winter. Once harvested, they are preserved until the spring of the following year, each variety in different ways or times.

Pumpkin Chips – flesh cut into thin slices
- 7 oz pumpkin (Vanity – cut into thin slices)
- 1 tsp extra virgin olive oil (or seed oil)
- to taste salt
- 1 tsp dried oregano (or thyme or rosemary or cinnamon)
- 3.5 oz pumpkin (SKIN in pieces)
- to taste salt
- to taste extra virgin olive oil
Tools
- Slicer or vegetable slicer or mandolin or sharp knife
- Bowl and a spoon
- Baking tray low oven tray or baking sheet
- Parchment paper (or silicone baking mat)
Preparation
First, cut thin slices of pumpkin, with or without skin, as you prefer.
To cut them, you can use:
– mandolin
– electric vegetable slicer
– slicer
– cheese slicer
– potato peeler
– very sharp knife
Preheat the static oven at 356°F.
In a bowl, place all the pumpkin slices (or pumpkin skins) and season with oil, salt, and your preferred herbs or spices.
Place the pumpkin pieces in a single layer on the oven tray covered with parchment paper.
COOKING Pumpkin Chips
Cooking times vary based on the thickness of the slices. The thicker they are, the longer it takes.
Bake in the preheated static oven at 356°F for about 10 minutes. To brown the vegetable and make it crispy, switch to the ventilated mode and bake for another 5 minutes, being careful not to burn them.
Turn off the heat, slightly open the oven door, and leave the pumpkin inside for another 3 minutes.
COOKING pumpkin skins
Bake in the preheated static oven at 356°F, on the lower shelf, for about 15 minutes.
If you want them crunchier, use the ventilated function for the last minutes of cooking, watching them closely.
