Preparation of chickpea flour crêpes
Preparing our crêpes takes minutes. In a tall-sided container, pour the water. Sift the chickpea flour and add it to the water. Add the salt and extra virgin olive oil.
Stir with a spoon and then blend everything with an immersion blender until you have a smooth and homogeneous mixture. Pour a little oil into a pan and remove the excess with a paper towel.
Pour small quantities of batter into the pan and distribute the mixture by rotating the pan. When the crêpe detaches from the bottom, using a spatula, flip it and cook for another minute on the other side. Continue like this until all the batter is used. Cover with plastic wrap until ready to serve.
