- 2 cups toasted hazelnuts (finely chopped)
- 3/4 cup sugar (preferably powdered)
- 1/4 cup unsweetened cocoa powder
- 3 egg whites
- 1.5 tbsps acacia honey
- 3.5 oz 70% dark chocolate

Steps
Using a chopper, finely grind the toasted hazelnuts, and mix them with cocoa and sugar (preferably powdered sugar).
In a bowl, beat the egg whites until stiff peaks form, then add them along with the honey to the dry ingredients, mixing everything together. You should obtain a fairly soft, spreadable dough that can be placed in a piping bag with a ridged nozzle or a pastry syringe.
On a baking sheet lined with baking paper, pipe out small rose shapes of dough about 1-1.5 inches in diameter using the syringe or piping bag. Bake in a preheated static oven at 383 degrees Fahrenheit for 10 minutes. Let the rose-shaped cookies cool, then pair them two by two with chocolate melted in the microwave. This way, we will have obtained the famous Baci di Alassio to serve with tea.
