Praline Almonds with Air Fryer
Homemade praline almonds with the air fryer, like the ones you buy at county fairs or market stalls in the city, a practical and quick way to obtain a delicious comfort food in no time, they’re irresistible, one leads to another, only 3 ingredients.
When I saw them online made with the air fryer, I confess I was a bit skeptical. I decided to do an initial experiment with half a dose and I was convinced, they turned out perfect, disappeared in a flash, and I had to make them again immediately upon great request, so the recipe is super tried and tested.
Praline almonds are also called “mother-in-law silencers“ because medieval legend has it that it was the sweet that “saved” boyfriends from the gossip of mothers-in-law, as elderly people couldn’t bite into this crunchy sweet and so let the sugar slowly dissolve in their mouths. This prevented mothers-in-law from using their long tongues: to enjoy the almonds they necessarily had to remain silent for a long period, an activity that led women to fall asleep and save the boyfriends!
Almonds are a kind of “superfood”: for our ancestors, these fruits were a remedy for hangovers and above all a powerful aphrodisiac, today they are considered a real boon, being rich in beneficial properties for our body. In particular, they are an excellent source of plant proteins.
Usually, these pralines are eaten during the Christmas period or on All Souls’ Day, instead of nougat, but they are so good that they are prepared all year round, great as a protein snack or as a tasty snack or as a small dessert to enjoy at the end of a festive dinner, in anticipation of the real dessert. Praline almonds, packaged in appropriate food bags, can also serve as a small tasty DIY gift.
With this recipe, you can use the nuts you prefer, e.g.: peanuts, cashews, hazelnuts, pecans, walnuts.

Ingredients for Praline Almonds with Air Fryer
- 5.3 oz almonds (whole, shelled with the brown skin, or other types of nuts)
- 0.4 cup granulated sugar
- 0.3 cup water
- 0.6 tsp vanilla extract (optional)

Steps for Praline Almonds with Air Fryer
Take an aluminum tray and cover it with parchment paper (or use the appropriate paper liners for air fryer, see notes below). Add the whole almonds (or the chosen nuts) with the skin, this will allow the sugar to adhere better (so do not peel them). Finally, pour the sugar, water, and vanilla extract (optional). The almonds should be in a large dish in a single layer, not overlapping. Mix everything well to ensure that all the almonds are well coated with the sugar and water mixture.
If you have time, before using them, lightly toast the almonds in a hot oven (5/6 minutes) or in a pan over low heat; this way, you will have even crunchier praline almonds.
Place the container in the air fryer and set the temperature to 356°F (180°C) for about 20 minutes, turning them a couple of times.
Let the praline almonds cool, then break apart with your hands those that have stayed together.
Notes and Tips
You can store the praline almonds for about a week, preferably in an airtight container or in plastic food bags.
