Ingredients for the Pizza Breadsticks

  • 3 1/2 cups all-purpose flour
  • 3/4 cup semolina flour
  • 1 1/4 cups water (lukewarm 70°F)
  • 1 1/2 tsp fresh yeast (3g dry yeast)
  • 2 tbsp extra virgin olive oil
  • 1 tsp sugar (level)
  • 2 tsp salt
  • 1 can peeled tomatoes (or tomato sauce)
  • 5 1/3 oz mozzarella (for two breadsticks)
  • to taste oregano (for three breadsticks)
  • to taste salt
  • to taste extra virgin olive oil
  • 8 leaves basil

Steps for Pizza Breadsticks

  • Crumble the fresh yeast into a large bowl and dissolve it in lukewarm water, also adding the sugar. Mix well.

    Add the flours and the oil.

    First mix with a spoon, then add the salt and knead by hand until you have a smooth and soft dough.

  • Cover with cling film and let it rise in a warm place, like the oven turned off with the light on, for at least 4 hours, or until it has more than doubled in volume.

  • Turn the dough out onto the work surface and roll it with a rolling pin.

    Cut out some loaves and place them on a greased baking tray.

    (I made 5 long ones, but you can make them shorter).

    Brush the surface with some tomato and let them rise in the turned-off oven with the light on for about 1 hour (they should double in size).
    Some I left without oregano to create a mix of breadsticks.

    (I made three with oregano and two without, to add mozzarella, and here you can be creative and fill them as you like).

  • Bake in a ventilated oven at 480°F for 10 minutes in the lower part and for 5/10 in the middle.

    In the last 5 minutes, take them out and add the mozzarella on some of the breadsticks.

    Bake for another 5 minutes or until the mozzarella has completely melted.

    You will have made truly irresistible soft breadsticks, which can be the base for various toppings.

Tips

It’s still warm now so 5 hours of rising are needed, but if your home is cooler, the rising time will be longer.

You can store the breadsticks in the fridge for two or three days; just reheat them in the oven for a few minutes before consuming.

You can also freeze the pizza breadsticks after baking.

You can garnish the breadsticks with different ingredients, like mushrooms, cold cuts, various cheeses, grilled vegetables, for breadsticks with different flavors.

I used two types of flour: all-purpose flour and semolina flour.

But it also works well with just all-purpose flour.
