Fresh Olives in a Pan with Sausage

The best olives for this recipe are the sweet “Lazzare” or “Nolche”; this variety is the first to ripen in September and is also called muredda, saracina, scurranese.
Note that green olives have a very bitter taste, while black and purple ones are slightly sweeter.

  • 3.5 oz olives (fresh, see above for type)
  • 7 oz sausage (salami paste)
  • to taste salt
  • to taste extra virgin olive oil (can be omitted)
  • 1 clove garlic (optional)

For vegans or vegetarians, replace the sausage with tofu cubes.

Fresh Olives in a Pan with Sausage

  • Preparing fresh olives in a pan is really easy and quick.

    First of all, it’s better to keep the olives in water and baking soda for at least half an hour, then wash them well and dry them.

    Meanwhile, cut the sausage paste (or small salami) into small pieces and brown it over medium heat in a non-stick pan, preferably without any seasoning, for about 10 minutes or until cooked, stirring occasionally.

    Once the meat is cooked, add the clove of garlic, crushed in its skin (optional), along with the washed fresh olives. Salt everything and cook over high heat, stirring occasionally until the olives soften.

How to Serve Cooked Olives

BRUSCHETTA: place the hot sausage with the cooked olives on a slice of toasted Tuscan bread (in the same pan used to cook the olives to make it more flavorful), sprinkle with extra virgin olive oil while still cold, and enjoy immediately.

As a MAIN DISH, serve the sausage with the olives alongside some polenta or roast potatoes.

    Add the washed olives and sauté them with salt and thyme.
    Cover and let them flavor for a few minutes.

    Add the washed olives and fry them together with whole or halved cherry tomatoes.
