Ingredients

  • 1 1/2 cups white beans (cannellini)
  • 14 oz pork sausage, fresh, cooked, in a pan
  • 1 glass red wine
  • 2 cups tomato puree
  • 1 tomato
  • 1 stalk celery
  • 4 leaves bay
  • 1 sprig rosemary
  • 3 cloves garlic
  • 1.5 l water
  • 1 drizzle extra virgin olive oil
  • 1 pinch salt

Steps

  • Regardless of the type of sausage we use, we will fry it to brown it on all sides in a large, high-sided pan with extra virgin olive oil, garlic, rosemary, and bay leaves.

  • As soon as the sausage is well browned on all sides, I removed all the spices and added the white cannellini beans that I had already prepared beforehand. Here is the recipe for how to cook dried beans or alternatively, you can safely use pre-cooked canned beans.

  • After adding the beans and letting them cook with the sausages for a few minutes, just the time to bring everything to the same temperature, we will add the tomato sauce and cook with the lid on for about 30 minutes or until the tomato sauce is well thickened and rich.

  • In particular, let’s prepare attention to the cooking of the sausage and if necessary, we will add a little hot water as needed until it is well cooked.

  • Finally, turn off the gas and after letting it rest for 10 minutes, plate and serve.

    The sausage and beans are ready to eat and enjoy.

  • Can I use any type of beans?

    For the sausage and beans recipe, you can use pretty much all types of beans we are used to consuming, but personally, I would not use white Spanish beans or large-sized beans like these. Let’s say the ones that are best suited for this type of preparation remain the white cannellini beans, black beans, red beans, or black-eyed peas.
