OATMEAL COFFEE AND CHOCOLATE COOKIES

Oatmeal coffee and chocolate cookies are delightful treats with a slightly crunchy texture topped with delicious dark and milk chocolate drizzles, but what really makes them special is the mix of ingredients that compose them. I find them fantastic. When I crave sweets, I always think of cookies, all kinds of cookies, but I find these really fantastic. I recommend trying them, and I am sure they will win you over from the first bite. Now let’s see what we need to make the oatmeal coffee and chocolate cookies.

Ingredients

Crispy and delicious oatmeal coffee and chocolate cookies, also baked in an air fryer, but what makes them special is the mix of ingredients that together make these cookies truly unique

  • 1 cup rolled oats
  • 1/4 cup cereal (I used those with chocolate bits)
  • 1/4 cup muscovado sugar
  • 1 espresso cup coffee
  • 6 tbsp butter (soft)
  • 1/2 cup all-purpose flour
  • ground cinnamon (to taste)
  • 100 g milk chocolate (for filling)
  • 100 g dark chocolate (for filling)

Steps

LET’S PREPARE THE COOKIES

  • In a food processor, blend the rolled oats, sugar, and cereal, then add the remaining ingredients. Transfer everything to the work surface and knead well. The dough might be a bit sticky, so use some flour to roll it out, but don’t overdo it. Cut out the cookies using a cookie cutter; I used a round one, but you can use any shape you like. Place the cookies on a baking sheet lined with parchment paper, bake at 350°F for about 20 minutes, or you can also bake the cookies in an air fryer like I did, at 400°F for 15 minutes. In the meantime, melt the two chocolates in a double boiler, and once the cookies are baked, use a fork to drizzle the dark chocolate first, then the milk chocolate, over the cookies. Let the cookies cool and then enjoy. I couldn’t resist, so I ate the cookies while the chocolate was still melted on top.
