Apple Tart for the Women of Le ROSA

The apple tart and jam is a true delight for the eyes and the palate. A very simple and quick recipe to impress everyone: from the youngest to the grandparents. Perfect as a homemade flower cake to celebrate an anniversary, Christmas, Valentine’s Day, or a graduation.

This cake reminds me of a rose, and for this reason, I dedicated it to the LeROSA group which, thanks to its founder Giulia Bezzi, creates unity and collaboration among many wonderful women.

APPLE SEASON: all year round, the best period is from late summer through fall.

Apple Tart and Jam

For the tart, I used 19 oz of shortcrust pastry, with the remaining 8.5 oz, I made cookies.

  • 5 oz butter (soft)
  • 2 1/2 cups all-purpose flour (+ another 1/8 cup to roll out the shortcrust pastry)
  • 3/4 cups potato starch (or another all-purpose flour)
  • 3/4 cups sugar
  • 2 teaspoons baking powder (about 5 g)
  • 1 pinch salt
  • 1 egg (medium)
  • as needed water (cold – about 2 tbsp)
  • 1/2 cup raspberry jam (or another red fruit jam: strawberries, cherries, red currants…)
  • 4 apples (RED LOVE – red-fleshed)
  • 2 teaspoons brown sugar (to sprinkle on top)

Red Apple Tart

  • Prepare the shortcrust pastry

    In a bowl, add: 5 oz of soft butter diced, 2 1/2 cups of all-purpose flour, 3/4 cup of potato starch (or another flour or cornstarch), 5 g of baking powder and a pinch of salt. Mix everything with your fingertips until it forms a sandy mixture, then add 1 egg and the needed water (for me 2 tbsp) to obtain a homogeneous and elastic dough.

    Place it on the work surface and form a ball, cover with plastic wrap and let rest for half an hour in the fridge or 10 minutes in the freezer.

    Meanwhile, prepare the apples: cut them into quarters, remove the core, and peel them. Prepare thin slices a few millimeters thick.

  • Remove the shortcrust pastry from the fridge and with the help of a rolling pin, roll it out on a floured board to a thickness of about 3/8 inch. Roll it over the rolling pin and place it in the previously buttered or parchment-lined mold.

    Level the edge with a knife and prick the entire bottom of the tart with the tines of a fork.

    Preheat the static oven to 356°F.

  • Cover the base with a thin layer of red jam, then start decorating the entire tart with the apple slices arranged in a radial pattern.

  • Sprinkle the surface with a tablespoon of brown sugar.

    Bake for about 45 minutes or until done. Remove the apple tart from the oven and let it cool for an hour before removing it from the mold.

  • Prepare the large cookies with the leftover shortcrust pastry and apple slices.

    Roll out the dough and create round or square cookies about 3 inches in diameter. Place apple slices on top and a brush of red jam. Bake in a hot oven for about 30 minutes or until done.

ALTERNATIVES and variations

– use other types of apples (not red-fleshed), the cake will be less impactful but equally good

– flavor the shortcrust pastry with a powder of: vanilla, cinnamon, cloves, Tonka bean, ginger, nutmeg, cardamom, long pepper, lemon peel, or other citrus.

STORAGE of the apple tart

Store the apple tart at room temperature or in the fridge for up to 3 days.
