  • 3 1/4 cups all-purpose flour
  • 1 cup apple cooking water
  • 2 tbsps extra virgin olive oil
  • 6 oz apples (cooked)
  • 1 tbsp sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 tsp salt
  • 1 cube of fresh baker's yeast
  • 1 egg (for brushing)
  • walnuts
  • raisins
  • ground cinnamon

LET’S MAKE THE BRIOCHE BREAD

  • First, boil the apples in a saucepan with water, and once cooked, drain them and let the water cool. In a bowl or the bowl of a stand mixer, dissolve the fresh baker’s yeast, add the apple pulp, eggs, oil, sugar, and salt, and finally the flour. Mix very well or knead with the hook. Roll out the dough and add the chopped walnuts and soaked raisins, roll everything well and place the dough in a loaf pan lined with parchment paper and let it rise for at least two hours. Once risen, brush the surface with the egg and bake at 350°F for about 25/30 minutes, but always adjust according to your oven. Remove from the oven and let it cool before enjoying it. If you want to add jam, add it along with the walnuts and raisins.
