If you love mushrooms, here is How to Clean and Cook Honey Mushrooms. I decided to write this little guide because until recently, I didn’t know that honey mushrooms should be consumed only after boiling.
Honey mushrooms contain a thermolabile toxin that is eliminated only after reaching 158°F, so they must be cleaned and parboiled for 10 minutes, taking care to remove the foam that forms on the surface.

- 1.1 lbs honey mushrooms
- 1 teaspoon coarse salt
- 2 tablespoons baking soda
- 2 tablespoons lemon juice

How to Clean and Cook Honey Mushrooms
To clean the honey mushrooms, first separate the individual stems very gently, perhaps using a small knife.
Remove any soil, twigs, or leaves if present, then rinse them well in a large bowl placed under the cold water tap a couple of times.
Drain the water, add fresh clean water along with baking soda, and let the honey mushrooms soak for 10 minutes.
Then, drain the water again, rinse the mushrooms again, and refill the bowl, this time letting the water run and gently moving the mushrooms with your hands.
Continue until you see clear water.
After cleaning them thoroughly, place a high-edged pot on the stove that can hold them all, add some salt and lemon juice.
Once boiling, incorporate the honey mushrooms and start skimming them whenever you see foam on the surface.
Continue for at least 10 minutes, skimming well, as the toxins in the honey mushrooms surface with the foam.
After 10 minutes of boiling, the toxins are gone, so drain them and place them on a clean and dry dish towel.
Once dry, you can store them in the refrigerator for 2 days, well sealed in an airtight container, or use them immediately for your recipes.
