Today we’re going to see how to clean honey mushrooms and prepare them for pasta, sautéed dishes, or your favorite recipes. That’s because honey mushrooms contain a protein toxin that is, however, heat-sensitive, so by boiling them for a few minutes we can serve them safely and deliciously. Steps to Clean Honey Mushrooms

  • First, take the mushroom clusters. Remove the earthy part at the base of the stems and separate them. Remove any excessively woody mushrooms. Remove twigs and moss found among the mushrooms. Put them in a colander.

  • Fill a large bowl or sink with water. Dissolve a tablespoon of baking soda. Submerge the mushrooms and let them soak for at least 20 minutes, stirring occasionally to help any remaining soil fall off.

  • In the meantime, heat plenty of salted water. Retrieve the mushrooms from the water and submerge them in boiling water. Boil for 15-20 minutes, skimming off the foam that forms on the surface with a skimmer ladle. Retrieve them and place them on a cloth or paper towel. Pat them dry with another cloth or more paper towels. At this point, you can put them in containers and freeze them or proceed with your favorite preparations.

Storage

You can keep them in the fridge for a couple of days before cooking them in your preferred way or store them in the freezer.
