Baked Scallions
- 4 fresh scallions (white or red)
- 1 tbsp breadcrumbs (gluten-free for celiacs)
- to taste salt
- to taste marjoram (or basil, oregano, thyme…)
- 1 clove garlic (optional)
- to taste extra virgin olive oil (or seed oil)

Baked Scallions
Preheat the static oven to 356°F.
Peel and wash the scallions, then cut them into four parts lengthwise (or in two parts depending on their thickness).
Place them in a baking dish to form a single layer.
In a cup, pour: breadcrumbs, salt, chopped garlic, and your preferred dried herbs. Mix with a fork.
Sprinkle the scallions with the prepared seasoning and drizzle with a bit of extra virgin olive oil.
Bake in a preheated static oven at 356°F for about 30 minutes, on a low rack, until the desired level of doneness is reached. Towards the end of cooking, if desired, move the baking dish to a high rack to gratinate the scallions in the oven.
STORING baked scallions
Baked scallions can be kept in the refrigerator (in an airtight container or covered) for up to 3 days, reheat before consuming.
Fresh scallions can be stored in the fridge in the fruit and vegetable compartment for 10 – 12 days.
What parts of the scallion can be eaten?
Both the white and green parts of the scallion can be eaten, while the harder and drier outer part is discarded.
How is scallion used in cooking?
The white part of the scallion can be used in cooking just like an onion, to flavor salads, soups, sautés, and dressings. It can be consumed either raw or cooked.
The green part of the scallion is ideal for enriching omelets or minestrone, it has a flavor similar to chives but more intense.
