PREPARE THE FILLING.
Place the ricotta on a sieve over a bowl and use a fork to sift it to make it softer. Add the parmesan and mix well, add the speck, season with salt and pepper, mix everything, and finally add the mozzarella cut into pieces.
NEXT, PREPARE THE FLOWERS
Gently open the flowers, being careful not to break them, cut the central pistil, and fill them, close them gently, and roll them in breadcrumbs. Arrange the flowers on the air fryer tray, spray a little oil on top, and sprinkle some more breadcrumbs. Cook at 360°F for 10 minutes. Check the cooking time as it may vary depending on the fryer you use; if they are not golden and crispy, increase the time a bit. Enjoy them hot and stringy; they are delicious.
