It had been a while since I wanted to try shortcrust pastry with buckwheat flour, and this time I not only used buckwheat but also almond flour, and since I love desserts with a rustic, crispy, and creamy look, this time I combined all three ingredients and came up with a fantastic tart. For the filling, I used sauteed apples and berry jam, but I assure you it’s also delicious with just good jam. Try it, and you’ll taste the delight.   • 2 cups buckwheat flour
  • 1/2 cup almond flour
  • 4.6 oz butter (cold)
  • 2 eggs
  • 1 egg yolk
  • 1/2 cup brown sugar
  • grated lemon zest
  • powdered sugar (for dusting)
  • 2 apples
  • jam or preserves (I used berry)
  • 1 teaspoon cinnamon powder
  • 1 tablespoon brown sugar
  • 1 small glass water
  • 2.1 oz almonds

LET’S PREPARE THIS DELICIOUS TART

  • To make the shortcrust pastry, you can use a mixer or Thermomix. If using the mixer, place the flours and cold butter in the container and blend, then add the eggs, sugar, and lemon zest, form a nice dough, cover it, and let it rest in the fridge for at least 30 minutes.

    PROCEDURE WITH THERMOMIX

    Place all the ingredients in the basket for 25 seconds, speed 5, stirring.

    PREPARE THE FILLING

    Peel one of the two apples, cut it into cubes, place them in a pan with cinnamon, sugar, and water, and cook for a few minutes, just until they soften.

    Once the shortcrust is ready, take some out and put it in the freezer, roll out the rest in a buttered and floured pan, cover the bottom with jam, then add the apples. With the help of a teaspoon, lower the edges of the tart onto the apples, then add the chopped almonds. Now take the shortcrust you set aside and grate it over the base using a grater with large holes. Cook the tart in an air fryer at 392°F for 15-20 minutes, but always check the cooking as it may vary depending on your air fryer or in the oven at 356°F for about 35 minutes. Once cooked, dust with powdered sugar and enjoy this fantastic tart.
