Super tender curry chicken thighs
These curry chicken thighs are tasty and very easy to prepare in a short time, even a day in advance (in that case, however, it’s better to fry them at the last moment). They need to marinate in curry-flavored oil for at least an hour, and that’s the secret that makes them crispy outside and super tender inside.

Ingredients for Super Tender Curry Chicken Thighs
- 2 chicken thighs (or drumsticks, about 0.55 lbs already deboned)
- 1/2 cup extra virgin olive oil
- 1 tsp curry
- 2.4 tbsp lemon juice
- 1/4 tsp sage
- 1/2 tsp fine salt
- to taste breadcrumbs
- to taste vegetable oil (for frying)

Steps for Super Tender Curry Chicken Thighs
First, buy 2 chicken thighs (or the drumsticks) and have them deboned by the butcher and flattened well with a meat pounder.
Take a bowl and with a hand whisk, mix well: oil, lemon juice, curry, salt, and sage.
Pass each piece of chicken through the curry-flavored oil and place it in another bowl with all the remaining flavored oil. Marinate the chicken for at least an hour, this process will make it super tender.
Take a bowl, pour in the breadcrumbs, and bread the chicken thighs several times, pressing with your hands to make the breading adhere well.
Finally, pour plenty of vegetable oil into a frying pan and bring the temperature to about 338°F (preferably, a kitchen thermometer would be needed). Cook for about 6 minutes in total (3 minutes on one side and 3 on the other).
Serve the chicken thighs hot, accompanied by lemon slices and fresh salad with arugula.
