Ingredients for Preparing Pasta with Pumpkin Cream and Stracchino

  • 11.3 oz short pasta
  • 7.1 oz pumpkin flesh
  • 5.3 oz stracchino
  • 2 tbsp chopped celery, carrot and onion
  • 3 tbsp extra virgin olive oil
  • 1 tbsp chopped parsley
  • to taste milk

Steps for Preparing Pasta with Pumpkin Cream and Stracchino

  • First, wash the pumpkin, cut it into pieces and remove the seeds. Steam it to make it soft. I used a pressure cooker and it took 20 minutes from the whistle.

  • In a non-stick pan, place a chopped mix of celery, carrot, and onion with a couple of tablespoons of extra virgin olive oil. Let it sauté and add the soft pumpkin flesh, peeled and cut into pieces. Add some milk, salt, and pepper, and mash with a fork until you get a cream. Flavor with the chopped parsley. Enrich with stracchino and mix to obtain a cream.

  • Cook the pasta and drain it al dente, setting aside some of the cooking water. Add it to the pumpkin cream and let it flavor for a couple of minutes, adding the pasta cooking water. Serve the pasta still hot.

Storage

I recommend not storing the dressed pasta, but you can prepare the pumpkin cream a couple of days in advance.
