A main course today is my recipe of the day, a rich preparation with sedanini, bacon, artichokes, and gorgonzola full of flavor with a seasonal vegetable, artichokes!
Even though I’m not a fan of this type of vegetable, occasionally I prepare a little recipe that I end up eating alone because Andrea just doesn’t like them!
I added gorgonzola but if you prefer, you can use ricotta or robiola creamy cheese depending on personal taste.
It’s a sauce suitable for short pasta shapes because I believe that with long pasta it would become an unmanageable and inedible mess!

Ingredients
- 10.5 oz ridged sedanini
- 4.6 oz smoked bacon
- 14.1 oz artichokes
- 1 shot dry white wine
- 3.2 oz gorgonzola
- as needed extra virgin olive oil
- as needed salt
- as needed pepper

Steps
1) To prepare the recipe of sedanini with bacon, artichokes, and gorgonzola, first clean the artichoke!
2) Then …remove the outer leaves and part of the stem, then cut each artichoke in half, removing the internal beard and cutting the first 2/2.5 cm with the tips of the artichoke.
3) Now cut each half artichoke into thin strips and put everything in a bowl with water and lemon juice to prevent the vegetable from darkening.
4) In this regard, I recommend cleaning artichokes using disposable gloves because your fingers will turn black too!
5) In a pan, put a couple of tablespoons of EVO oil, and when it sizzles, add the bacon and brown it for about 4/5 minutes.
6) Remove the bacon, putting it on a small plate, and eliminate part of the fat by then adding the artichoke strips and seasoning with salt and pepper.
7) Pour a shot of still white wine into the pan and simmer everything, then cook the artichokes for 7/8 minutes or until the vegetable is tender.
8) When they are cooked, turn off the flame and add the gorgonzola, which will slowly melt with the rest of the sauce already ready.
9) In the meantime, I have put the high-sided saucepan on the flame with salted water for cooking the pasta, which I will throw in at boiling point and cook until the sedanini are al dente.
10) Drain the pasta and while it is still wet, add it to the pan (keeping aside a ladle of cooking water if needed) and mix well, adding the bacon, adjusting the saltiness and pepper, and allowing the pasta to be enveloped and seasoned by the sauce of bacon, artichokes, and gorgonzola!
