A super smart second course because it’s delicious and very quick to prepare, the rolled omelette in pizzaiola style is the joy of both adults and children. Preparation of the rolled omelette in pizzaiola style
In a bowl, pour the tomato sauce. Add the tomato paste, salt, pepper, extra virgin olive oil, and oregano. Mix and set aside.
Break the eggs, add salt and pepper, add Parmesan cheese and beat them lightly. Pour a little oil into a pan. Add the eggs and cook for a few minutes on each side, flipping halfway through the cooking.
Spread the tomato sauce on the omelette. Cover with sliced cheese and roll it up. If necessary, secure with toothpicks to keep the omelette rolled. Top with Parmesan and a final drizzle of oil. Place in the oven on a baking tray lined with parchment paper at 392°F for 5 minutes and serve.
Storage
You can store the omelette in the fridge for a couple of days.
Can I use another type of cheese?
Of course, you can use the cheese you like in slices or diced.
