Lemon pasta is an absolute trick. With very few ingredients that we all have in the fridge, it allows us to prepare a special and very tasty dish. It only takes a few minutes, just enough time to boil the pasta and a unique sauce, perfect when it’s very hot, but not only because they are always delicious. We can also prepare them with bottled lemon juice often found in the supermarket, which solves the problem of dried-out lemons at the bottom of the fridge, but if you have a lemon, organic ones are better because we will use the peel too. - 3.4 tbsp extra virgin olive oil
- 1 large lemon
- 1 red Tropea onion

Preparation of lemon pasta
Bring plenty of salted water to a boil. When it comes to a boil, add the pasta, stirring until the water boils again.
Chop an onion more or less finely depending on your taste. Let it soften in a pan with a dash of oil. Add the grated lemon zest and the juice of half a lemon. Scent with fresh basil.
Drain the pasta while it’s very al dente, reserving some cooking water. Toss the pasta with the lemon sauce, adding a bit of cooking water if necessary, and finish with a drizzle of oil before serving.
Storage
It’s such a quick pasta to prepare that I advise against making it in advance and storing it.
