Creamy Strawberry Clafoutis – Easy Recipe

With all these strawberries now available at greengrocers and supermarkets, I fancied a simple dessert suitable for beginner cooks and today I prepared this delightful and very easy creamy strawberry clafoutis!

The clafoutis original recipe is a delicate spoon dessert that we can make with almost any kind of fruit: it is easy and has the texture of a pudding, creamy and soft!

This clafoutis recipe without cream with strawberries is particularly light and indulgent and could be a nice idea for an afternoon snack for the little ones and not only. On the blog you’ll already find several versions, all very easy!

The clafoutis has French origins; the clafoutis is a butter-free dessert with a pudding-like consistency that we can flavor with lemon zest or vanilla extract, also combining an aroma with the fruit we use, for example adding a pinch of ground cinnamon if we make a apple clafoutis.

If I may briefly explain the original French clafoutis recipe, after choosing the seasonal fruit you prefer, you just need to prepare a liquid batter of milk, eggs, flour and sugar that will envelop the fruit and set while baking in the oven.

The original French clafoutis uses cherries as its main ingredient, which are placed whole with the pit, and it originated in the Limousin region, rich in these fruits; it was considered a poor-man’s dessert taken to the fields as workers’ food.

As I said, it’s a very easy spoon dessert and the only advice I can give is that the fruit should be firm and not too wet—for example, I’d say no to using kiwi as an ingredient for clafoutis. It is generally decorated with a dusting of powdered sugar.

Savory clafoutis are also excellent, where instead of sugar we can use grated Parmesan or another cheese, and below you’ll find a couple of those recipes already on the blog!

Ingredients

Rectangular baking pan 10 x 6 in

  • 2 1/3 cups strawberries (ripe and firm!)
  • 1 cup milk
  • 4.2 oz sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 4.6 oz flour
  • as needed powdered sugar

Steps

  • 1) To prepare this delicate spoon dessert, make the batter by beating the eggs with the sugar using a whisk until the mixture is frothy.

    2) Now add the sifted flour and then pour the milk in a thin stream to avoid lumps. If any lumps form, no problem: you can remove them with a sieve or a fine-mesh strainer!

    3) Preheat the oven to 374°F and line the baking pan with parchment paper: I used a rectangular ceramic pan but you can also use a 9 in round pan, also lined with parchment paper, be sure to do so!

    4) Pour the batter into the pan and add halved strawberries (remove the stems), washed and well patted dry with paper towels.

    5) All that’s left is to bake the creamy strawberry clafoutis for about 40 minutes, or according to the characteristics of your oven!

    6) Delicate and delicious — just let it cool for a couple of hours, dust with powdered sugar and serve for tasting!

If you want to try it with cream, split the amount of milk and use half milk and half heavy cream…
