With all these strawberries now available at the greengrocer’s and in supermarkets, I had a craving for a simple dessert perfect for beginner cooks, and today I prepared this delicious and easy creamy strawberry clafoutis!
The original clafoutis recipe is a delicate spoon dessert that we can prepare with almost any type of fruit: it’s easy and has the consistency of a pudding, creamy and soft!
This clafoutis recipe without cream with strawberries is particularly light and tasty and could be a fun idea for a snack for both kids and adults, and you can already find more versions on the blog, all super easy!
Clafoutis has French origins, it’s a butter-free dessert with a pudding-like consistency that we can flavor with lemon zest or vanilla extract , pairing the aroma with the fruit we include, for example adding a pinch of cinnamon powder if we prepare apple clafoutis.
To briefly explain the original French clafoutis recipe, I can say that after choosing the seasonal fruit we like most, it will be enough to make a fluid batter of milk, eggs, flour, and sugar that will envelop the fruit, solidifying during baking.
The original French clafoutis recipe has cherries as its main ingredient, which are used whole with the pit, originating from the Limousin region, rich in this fruit, and was considered a poor dessert to be brought to the fields as farmers’ food.
As I said, it’s a very easy spoon dessert, and the only advice I feel like giving is that the fruit should be firm and not too moist, for example, I would say no to using kiwi as an ingredient for clafoutis, and it’s generally garnished with a dusting of powdered sugar.
Savory clafoutis are also excellent, where instead of sugar we can use grated Parmesan or another cheese, and below you will find a couple of recipes already on the blog!

Ingredients
Rectangular baking dish 10 x 6 inches
- 12 oz strawberries (ripe and firm!)
- 1 cup milk
- 2/3 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- as needed powdered sugar

Steps
1) To prepare this delicate spoon dessert recipe, I make the batter by beating the eggs with sugar using the mixer until everything is frothy.
2) Now I add the sifted flour and then the milk slowly to avoid creating lumps. If lumps form, no problem because I can remove them with a sieve or a fine-mesh strainer!
3) I preheat the oven to 375°F and line the baking dish I will use with parchment paper: I used a rectangular ceramic one, but you can also use a circular 9-inch baking pan, always lined with parchment paper, please!
4) I pour the batter into the dish and add strawberry wedges without the stem, washed and well-patted dry with absorbent paper.
5) All that’s left is to bake the creamy strawberry clafoutis for about 40 minutes or depending on your appliance’s characteristics!
6) Delicate and delicious, just let it cool for a couple of hours, dust it with powdered sugar, and bring it to the table for tasting!
