This tasty savory strudel with vegetables like fresh and tender spinach and diced zucchini has been enriched with a fantastic burrata from Famila in San Lazzaro (Bologna) and a few pieces of brie that were left in the fridge!

Ingredients
- 1 package puff pastry (rectangular)
- 1 zucchini (medium)
- 1.75 oz baby spinach
- 8 slices mortadella
- 4.5 oz burrata
- 2.8 oz brie
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste sesame seeds
- to taste poppy seeds

Steps
1) Wash and slice the zucchini thinly after removing the ends.
2) Put a drizzle of oil in a pan and add the zucchini, making them tender but not overcooked; also add the washed baby spinach and continue cooking for a few more minutes, seasoning with salt and pepper.
3) Turn off the heat and let cool, then add the diced brie.
4) Unroll the puff pastry on a surface, leaving the parchment paper that comes in the package.
5) Place the slices of mortadella in the center, overlapping them vertically, then add the vegetable and cheese mix set aside to cool completely.
6) Then add the burrata, breaking it into several parts, and cover with the other slices of mortadella.
7) Close the puff pastry strudel, then turn it over so that the seam is underneath, and brush with a lightly beaten egg.
8) Sprinkle with sesame seeds and/or poppy seeds. Now, all that’s left is to bake at 375°F for about 40 minutes, but please check the cooking since my oven is on its last legs and not always reliable!
