A savory pie with mortadella, burrata, and zucchini for tonight’s dinner, very easy and appetizing thanks to the ready-made puff pastry!
This tasty savory strudel with vegetables like fresh and tender spinach and diced zucchini is enriched by a fantastic burrata picked up at Famila in San Lazzaro (Bologna) and some pieces of brie that were left in the fridge!

Ingredients
- 1 package puff pastry (rectangular)
- 1 zucchini (medium)
- 2 oz baby spinach
- 8 slices mortadella
- 4.5 oz burrata
- 3 oz brie
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste sesame seeds
- to taste poppy seeds

Steps
1) I wash and thinly slice the zucchini after removing the ends.
2) I put a drizzle of oil in a pan and add the zucchini, cooking them until tender but not mushy; I also add the washed spinach and continue cooking for a few minutes, seasoning with salt and pepper.
3) Turn off the heat and let it cool, adding the diced brie.
4) Unroll the puff pastry on a surface, leaving the parchment paper already present in the package.
5) Arrange the slices of mortadella in the center, overlapping them vertically, then add the vegetable and cheese mix that was set aside and completely cooled.
6) Then add the burrata, breaking it into several pieces, and cover with the other slices of mortadella.
7) Close the puff pastry strudel, then turn it over so that the seam is underneath and brush the surface with beaten egg.
8) Sprinkle with sesame and poppy seeds. Now all that remains is to bake at 375°F (190°C) for about 40 minutes, but please check the cooking as every oven is different and mine isn’t always reliable!
