Country-Style Zucchini

Country-Style Zucchini, here I am again to use up the many zucchinis that my daughter still brings from her beautiful garden.

I love zucchinis and each time I try to prepare them in a tasty and quick way to please everyone.

Country-Style Zucchini can also be prepared in the oven, but I obviously prefer the pan because it’s quicker and less expensive than the oven.

With a few simple seasonal ingredients, you’ll have a side dish that, if you serve it like we did with some good fresh ricotta, turns into a light and very tasty main course.

Ingredients for Country-Style Zucchini

  • 3 zucchinis
  • 1 onion
  • 1 beefsteak tomato
  • 1.75 oz green olives (or black)
  • 2 pinches salt
  • 1 teaspoon dried oregano
  • to taste basil (fresh)
  • 2 tablespoons extra virgin olive oil
  • 3 ricotta (3.5 oz each)

Preparation of Country-Style Zucchini

  • To prepare Country-Style Zucchini, first wash and trim the zucchinis, peel the onion.

  • Slice the onion thinly, or if you prefer, coarsely chop it, then cut the zucchinis in half and then into fairly small pieces.

  • Cut the beefsteak tomato (you can also use cherry tomatoes if you prefer) into pieces about the same size as the zucchinis.

  • Heat the extra virgin olive oil in a large pan, then cook the onion, stirring so it doesn’t brown, for 3 or 4 minutes.

  • Then add the zucchinis, season with salt and oregano, and keep the heat high, stirring occasionally to prevent sticking.

  • After 10 minutes, add the tomato pieces or halved cherry tomatoes and black or green olives, stir and continue cooking.

  • Once the zucchinis are tender but still intact, turn off the heat and season with basil leaves.

  • Adjust the salt if needed and if you like, add some ground chili pepper. Serve by placing a small piece of ricotta or half of a large one on each plate.

  • You can serve Country-Style Zucchini hot right after preparing or just warm.

How to Store Country-Style Zucchini

You can store them in the refrigerator, well sealed in an airtight container, for 2 days.

  • What other vegetable can I add?

    You can add 1 stalk of celery sliced along with the onion.

  • What can I substitute the onion with?

    If you don’t like onion, you can replace it with a clove of garlic, even whole, to remove at the end of cooking.
