Creamy Farfalle with Gorgonzola and Ham is incredibly simple and obviously very creamy, without cream and with prosciutto, perfect for a quick lunch since you only need the pasta cooking time to prepare the sauce and you’re done.
A last-minute dish to be enjoyed hot and creamy, however, if you want, you can replace the prosciutto with cooked ham or speck.
The Creamy Pasta with Gorgonzola can be enriched with diced vegetables to be cooked before adding the gorgonzola to the pan, such as diced zucchini (in summer) or radicchio sliced into strips (in winter).

Ingredients for Creamy Farfalle with Gorgonzola and Ham
- 11 oz pasta (farfalle or other short shape)
- 2 oz prosciutto
- 3.5 oz gorgonzola
- 1 clove garlic
- 3.5 tbsp milk
- to taste black pepper
- 2 tbsp extra virgin olive oil
Preparation of Creamy Farfalle with Gorgonzola and Ham
First, bring a pot of lightly salted water to a boil to cook the pasta.
Meanwhile, peel the garlic clove and sauté it in a large pan until it starts to become golden brown.
Remove it from the pan.
Cut the prosciutto slices into strips or tear them with your hands to get irregular pieces and let them brown in the pan for a few moments.
Add the chopped gorgonzola to the pan along with the milk and stir with a spatula to melt.
Meanwhile, cook the pasta, leaving it quite al dente.
Once the pasta is cooked, drain it directly into the pan with the sauce, add a ladle of cooking water, and toss everything together.
In a few moments, you’ll see the Creamy Farfalle with Gorgonzola and Ham ready, enveloped in this delicious cream.
If you want, you can season with freshly ground black pepper and serve. I did not add salt to the sauce due to the presence of gorgonzola and prosciutto.
