To prepare them, you can use peppers of different colors cut into chunks, sautéed in a pan with onion and olive oil until soft. Add some tomatoes and watch it become a succulent subject.

Ingredients for Peppers with Tomato
- 2.2 lbs peppers (red and yellow)
- 1 white onion (or large Tropea onion)
- 10.6 oz cherry tomatoes (or half peeled)
- chili pepper (optional)
- to taste extra virgin olive oil
- salt
- pepper
- 1 clove garlic

Steps for Peppers with Tomato
Peel the onion, wash and slice thinly.
Wash the peppers, cut the top, divide them in half, remove the seeds and white filaments.
Cut the peppers into chunks.
In a non-stick pan, heat the oil over medium heat, add the onions and the garlic.
Sauté over medium-low heat for about 5 minutes, stirring a few times with a wooden spoon.
Add the peppers to the onion and whole garlic. Cook covered over medium-low heat for 15/20 minutes.
Remove the garlic clove.
Remove the lid, add the tomatoes cut into chunks (if you don’t have fresh tomatoes, use peeled ones), add the chili pepper, salt, and pepper.
(The chili pepper is optional).
Mix well and cook for about 10 minutes until the peppers are tender.
They go very well with main courses based on chicken and other meats or simply with a cheese plate.

Peppers with tomato are a delicious side dish that will be a hit: for this reason, you can prepare them in quantity and store them in the refrigerator well closed in an airtight container for 4-5 days.
However, I do not recommend freezing them.
