Peppers with Tomato

Peppers with tomato are a simple and tasty side dish, perfect for accompanying your main courses.

A summer recipe, since peppers are in season from June to September. Seasonal fruits and vegetables are definitely tastier and richer in flavor. What I like most about summer is shopping at the market: all the stalls are full of colors and rich in fragrance.

I suggest buying medium-sized peppers, firm and fleshy.

Let’s not forget that peppers are very rich in water, containing about 90%, making them an excellent choice for summer.

To prepare them, you can use peppers of different colors cut into chunks, sautéed in a pan with onion and olive oil until soft. Add some tomatoes and watch it become a succulent subject.

Ingredients for Peppers with Tomato

  • 2.2 lbs peppers (red and yellow)
  • 1 white onion (or large Tropea onion)
  • 10.6 oz cherry tomatoes (or half peeled)
  • chili pepper (optional)
  • to taste extra virgin olive oil
  • salt
  • pepper
  • 1 clove garlic

Steps for Peppers with Tomato

  • Peel the onion, wash and slice thinly.

    Wash the peppers, cut the top, divide them in half, remove the seeds and white filaments.

    Cut the peppers into chunks.

  • In a non-stick pan, heat the oil over medium heat, add the onions and the garlic.

    Sauté over medium-low heat for about 5 minutes, stirring a few times with a wooden spoon.

    Add the peppers to the onion and whole garlic. Cook covered over medium-low heat for 15/20 minutes.

    Remove the garlic clove.

  • Remove the lid, add the tomatoes cut into chunks (if you don’t have fresh tomatoes, use peeled ones), add the chili pepper, salt, and pepper.

    (The chili pepper is optional).

  • Mix well and cook for about 10 minutes until the peppers are tender.

Peppers with tomato are a delicious side dish that will be a hit: for this reason, you can prepare them in quantity and store them in the refrigerator well closed in an airtight container for 4-5 days.
