How delicious are whipped shortcrust cookies!!!!! I made them chubby and only dipped in chocolate, but we can glaze them with royal icing, sprinkle them with colorful sugar sprinkles, and make them in any shape and size!
They are a great classic that everyone generally likes, and in every bakery, we find large quantities with pistachio granules, with candied cherries… in short, we can vary the taste and shape as we please!
Personally, we are not big cookie consumers in our family, not because we don’t like them but simply because if we have them at hand, we eat them all quickly!

Ingredients WHIPPED SHORTCRUST COOKIES RECIPE

- 7.5 oz butter (cold, cubed)
- 1.25 cups powdered sugar
- 1 egg (medium)
- 1 egg yolk (medium)
- 2.5 cups all-purpose flour
- 2 tbsp milk (cold and …read below in the notes, thanks!)
- 0.5 cup potato starch
- to taste vanilla extract

FOR THE PREPARATION OF THE WHIPPED SHORTCRUST COOKIES RECIPE
1) In a large bowl or in the stand mixer, I place the cold, cubed butter then add the powdered sugar and vanilla essence (my recipe to make vanilla extract you can read here)
2) Start whipping to obtain a creamy and homogeneous mixture.
3) Add the whole egg and the yolk, mixing again to incorporate everything for at least 2/3 minutes.
4) It’s time to add the sifted flour with the potato starch, always mixing and then adding the milk. As mentioned below, I needed to add extra milk to get the right consistency to come out of the piping bag… just saying!
5) Take disposable piping bags and fill them with the mixture, then start making whipped shortcrust cookies using a serrated nozzle of about 0.4 inch and shape them directly on the baking tray lined with parchment paper.
6) Make the cookie shapes you like, such as esses, horseshoes, alphabet letters, and bake in a preheated oven at 375°F for about 12/13 minutes… keep an eye on them, please!
