Chicken with Grilled Vegetables is a simple, quick, and perfect recipe for the whole family. It’s a tasty and wholesome dish, ideal for showcasing seasonal vegetables and bringing something tasty to the table with little effort.
A while ago, I prepared chicken strips with vegetables and air-fried chicken, two light and flavorful alternatives that were very well received.
For today’s recipe, however, I was inspired by the classic gratin chicken with potatoes, but with some variations thought specifically for summer.
Given the season and the abundance of fresh vegetables, I added onion, cherry tomatoes, and zucchini. These ingredients, along with the peppers, add color and flavor to the dish, making it even more complete and appetizing. Moreover, the gratin provides the vegetables and chicken with a golden and pleasant crust; while the meat remains tender and juicy inside.

- 2 bell peppers
- 1 onion
- 1 zucchini
- 10 cherry tomatoes
- 1 carrot
- to taste breadcrumbs
- to taste salt
- 1.76 lbs chicken
- to taste extra virgin olive oil
- to taste rosemary
How to Prepare Chicken with Grilled Vegetables
Cut the vegetables into medium-sized pieces: the bell peppers, zucchini, carrot, cherry tomatoes, and onion.
Gather everything in a bowl and add the breadcrumbs and the spices you like the most.
In the meantime, place the chicken on a baking sheet with a sheet of paper. Spread the vegetables over the meat, season everything with a drizzle of oil and bake in the oven preheated to 356°F for about 40 minutes.
Halfway through cooking, turn the meat. Finally, take it out of the oven, let it cool a bit, and serve your chicken with grilled vegetables warm.
Storage and Variations of Chicken with Grilled Vegetables
You can store it in the fridge in an airtight container until the next day. You can add potato wedges to the vegetables. If you prefer, you can use chicken breast and cut it into strips.
