Sandy Shrimp and Squid

Sandy shrimp and squid baked in the oven are a very tasty yet light main dish with oven cooking. Crunchy on the outside and tender on the inside, baked sandy shrimp and squid also have the advantage of not making the house smell of fried food, which, for me who has an open space, is a great advantage. I like to serve them with raw vegetables or with boiled potatoes seasoned with a little vinegar, extra virgin olive oil, and a pinch of salt. We love them at home and I often prepare them both with fresh and frozen shrimp and squid, but you need to make sure to dry them very well. Preparation of Sandy Shrimp and Squid

  • Wash the squid or calamari under running water. Remove the head and the “beak” of cartilage. Detach the tentacles. Remove the ink sack. Remove the outer skin and fins. Cut the belly into rings that are not too thin. Alternatively, you can use thawed rings; I used those, well rinsed and dried.

  • Clean the shrimp or prawns by removing the shell and the black vein on their back. In a bowl, mix the breadcrumbs, salt, pepper, chopped garlic and parsley, and grated lemon zest.

  • Preheat the ventilated oven to 356°F. Bake for 15 to a maximum of 20 minutes. Serve immediately once out of the oven.

Storage

You can store the shrimp in the fridge for a couple of days, but it is advisable to eat them immediately once out of the oven.
