Ingredients for Protein Seed Bread
- 1 cup rolled oats
- 1 cup sunflower seeds
- 3 1/2 tbsp flaxseeds
- 2 1/2 tbsp sesame seeds
- 1/2 cup oat flour
- 1/4 cup gluten-free buckwheat flour
- 2 eggs (or 150 g of egg whites)
- 1/3 cup raisins
- 1/2 tbsp baking powder
- 1/2 tsp salt
- 1 1/2 tbsp erythritol (or cane sugar)
- 2/3 cup plant-based milk

Preparation of Protein Seed Bread
To make the protein seed bread, first put all the seeds and raisins in a mixer or a food processor with blades and process until powdered.
Then place the ground seeds in a bowl and add the plant-based milk (choose the one you like best) and let it rest for 1 hour covered with a cloth.
After the resting time, you’ll see that the milk has been almost completely absorbed, so add the flours, baking powder, salt, and erythritol or cane sugar and mix very well.
In the meantime, preheat the oven to 350°F in static mode.
Lastly, incorporate the eggs or egg whites and knead until you have a soft and sticky dough.
At this point, brush a loaf pan with oil then pour the mixture into it.
Bake the Protein Bread in the middle rack of the oven for at least 40 minutes, doing the toothpick test before removing it.
The toothpick in this case will not come out completely dry due to the presence of so many seeds, but it should not come out wet either.
Take it out of the oven, let it cool slightly before removing the Seed Bread from the pan, and let it cool to room temperature before slicing and enjoying it.
How to Store Protein Seed Bread
You can store it in a tin box or inside a cloth or paper bag for 3 days.
