  • 4 cups all-purpose flour
  • 6.5 oz butter (cold)
  • 1 egg
  • 1/4 cup water
  • 3 tbsp sugar
  • 1 packet baking ammonia
  • 1 tsp baking powder
  • flavoring (I used grated lemon zest)
  • jam
  • brown sugar (for dusting)
  • powdered sugar (for dusting)

LET’S PREPARE THE BUTTER RING CAKE

  • Put the flour with the cold butter in a mixer and mix at speed 1 until everything is sandy, add the rest of the ingredients, and mix until a nice dough is formed that will be very soft, cover it with plastic wrap and let it rest in the fridge for at least 1 hour. After resting, roll out the dough on a sheet of parchment paper and form a large rectangle, spread the jam in the center and then start rolling the dough to form a large sausage, close it into a ring shape and place it on a round pan, roll a piece of parchment paper in the center of the ring so the hole won’t close. Dust with brown sugar and bake at 350°F for about 25 minutes but adjust according to your oven. Remove the ring cake from the oven and dust it with powdered sugar and before enjoying it, let it cool very well.
