Yogurt and Blueberry Cup

A delicious no-bake spoon dessert ready in no time, the Yogurt and Blueberry Cup is tasty and very simple.

Just sauté the blueberries with a little sugar for just 3 minutes and you’re almost done.

Don’t have blueberries? Use strawberries, apricots, peaches, blackberries, or any other berries; it will always be perfect.

Ingredients for the Yogurt and Blueberry Cup

  • 5.3 oz blueberries
  • 2 tbsp sugar
  • 5.3 oz 0% fat Greek yogurt
  • 3.4 fl oz heavy cream
  • 2.5 oz dry cookies (such as Digestive or Oro Saiwa)

Preparation of Yogurt and Blueberry Cup

  • To prepare the Yogurt and Blueberry Cup, start by melting the sugar in a pan with 2 tablespoons of water.

  • Then add the blueberries (keep some fresh for decoration) and caramelize them for 2 or 3 minutes, no more, otherwise they will break.

  • While the blueberries are cooling, whip the well-chilled cream from the fridge, and as soon as it starts to thicken, add the yogurt. If you want a dessert loaded with sugar, you can add 1 tablespoon of powdered sugar.

    I didn’t add it because the cookies, blueberries, and their cooking juice are already quite sweet.

  • Crush the cookies with a meat tenderizer or rolling pin to make a coarse powder.

  • Now you’re ready to assemble the Yogurt and Blueberry Cup, so place a layer of crumbled cookies at the bottom of each serving cup.

  • Cover with a generous spoonful of yogurt cream, then a spoonful of blueberries with their cooking juice.

  • Add more cream, cookies, and blueberries until the ingredients are used up. On top, distribute the fresh whole blueberries set aside and sprinkle with more blueberry cooking liquid.

  • Place the blueberry and yogurt cups in the refrigerator for at least 1 hour before enjoying.
