Baked Cabbage
- 1.54 lbs white and compact cabbage
- 1 onion (optional)
- Half clove Garlic (optional)
- Half tsp Salt (3 g)
- 3 tbsps Extra virgin olive oil (30 g)
- 0.7 oz Breadcrumbs (for celiacs: gluten-free breadcrumbs)
- 1 oz Grated Parmesan cheese (for vegetarians: without animal rennet – for VEGANS: nutritional yeast flakes)

- Baking Tray or large shallow baking pan

First of all, remove the outermost damaged leaves from the cabbage, cut it in half and wash it.
On a cutting board with a sharp knife, roughly slice the cabbage. Then cut into pieces.
Place the chopped cabbage in a bowl (optionally with julienned onion) season with minced garlic, salt, and oil. Mix well.
Place everything in a single layer on a large baking tray.
Grate the cheese and mix it with the breadcrumbs. Use a teaspoon to sprinkle evenly over the vegetables.
Bake in the center rack of the static oven at 392°F (convection at 356°F) for 20 minutes or more according to your taste.
The baked cabbage is also delicious when reheated the next day and keeps for up to 4 days in the refrigerator.
VARIATIONS of baked cabbage
– vegan version: replace the cheese with chopped nuts or nutritional yeast flakes
– add an onion (thinly sliced) to the sliced cabbage
– season with olives (Taggiasca) or sun-dried tomatoes cut into strips
– to prepare the same pan version recipe, add the breadcrumbs and cheese only in the last minutes of cooking
– cook the same recipe using SAVOY CABBAGE
– choice of aged hard cheese: Grana Padano, Parmigiano Reggiano, aged Pecorino, smoked Ricotta, Trentingrana….
