Chocolate Salami without Eggs and Butter

Here we are with a new variant of chocolate salami. The egg-free and butter-free chocolate salami, which I must say is my favorite. Naturally, my chocolate salami is also made with gluten-free cookies and plant-based cream and milk. If you prefer, you can substitute them with classic gluten cookies and lactose-containing cream/milk.

So what changes in this salami? You won’t have the classic hint of butter but you’ll have the enveloping taste and creaminess of the cream, yes because with cream and chocolate, a chocolate ganache is practically created, which is the base of our salami. The consistency does not change much. I recommend trying this super delicious alternative!!

Ingredients

  • 6 1/3 oz gluten-free dry cookies
  • 1/2 cup sweetened plant-based whipping cream
  • 3 1/2 oz 50% dark chocolate
  • 1/3 cup unsweetened cocoa powder, gluten-free
  • 1/2 cup powdered sugar, gluten-free
  • 1 tbsp coffee liqueur (or rum, optional)

Steps

Prepare all the ingredients.
Coarsely chop the cookies, be careful not to crumble them too much, it is pleasant to find larger pieces.
Now mix the cookies with the cocoa powder and the powdered sugar.

  • Chop the dark chocolate and melt it together with the cream (in a double boiler or microwave, in this case, maximum power for 35/40 seconds then stir and repeat). Then mix well until you get a smooth and uniform cream, optionally add the tablespoon of liqueur.

  • Combine the cookies with the chocolate cream and mix well to coat them evenly.

  • Turn the mixture out onto a sheet of parchment paper, shape it into a salami with your hands, wrap it, and close the ends tightly like a candy. By tightening the ends, it will compact and take shape better.

  • The chocolate salami is ready to rest in the refrigerator for 3/4 hours to set well. Then it can be opened, sprinkled with powdered sugar or cocoa powder if you prefer, and sliced.

If you like, you can add nuts for extra crunchiness.

The chocolate salami without raw eggs and without butter keeps in the refrigerator for 5/7 days, always keep it in a container.

If you want, you can freeze it; I always do, I prepare a bit more and slice it to have it ready in the freezer to serve with coffee to friends. If you freeze it whole, you will need to move it to the refrigerator a few hours before serving.
