Whole Baked Cherry Tomatoes – Cherry Confit
- 2.2 lbs tomatoes (cherry, datterini, pachino, perini, piccadilly, pizzutelli, sun wedges, spoon…)
- 2 cloves garlic
- 1 tbsp oregano (and/or thyme)
- 1 tbsp muscovado sugar (raw cane)
- 2 pinches salt
- to taste extra virgin olive oil (or peanut oil)

Whole Baked Cherry Tomatoes
First of all, remove all the tomatoes from their stems. Wash them thoroughly, several times. Then place them in a bowl and use a fork to prick them in several places (this will dry them faster and prevent them from bursting during cooking). Then pour all the ingredients over them and mix very well with your hands. Let them marinate. Preheat the fan oven to 265°F.
Fill a large non-stick baking sheet (or a baking sheet lined with parchment paper) with all the cherry tomatoes, in a single layer. Sprinkle with more oregano or fresh herbs. Bake in a fan oven at 265°F for about an hour and a half, or until you reach the desired level of cooking. The whole baked cherry tomatoes are now ready to be enjoyed or used in other preparations.
HOW TO STORE whole baked cherry tomatoes
STORE the whole baked cherry tomatoes in the refrigerator, in an airtight container for up to 3 days.
Before serving, they can be heated for a few minutes in the hot oven or in the microwave.
VARIATIONS
For a different touch (when trying new flavors in your dishes, add only a small amount) of:
– Fresh aromatic herbs: dill, basil, fennel, marjoram, mint, pennyroyal, rosemary, savory, santolina…
– Spices sweet or spicy: cinnamon, nutmeg, paprika, chili pepper, vanilla or a bit of curry.
– Citrus zest: orange, citron, lemon…
GREAT results also with yellow or green cherry tomatoes.
