Baked Apple Cake

Today I propose a classic and comforting recipe but with a peculiarity: the baked apple cake.

The apple cake is perfect for every season and represents a true comfort food capable of awakening childhood memories.
The baked apple cake stands out for its soft and moist texture, enriched by the sweet aroma of apples, which when used cooked give a different texture than usual.
I must admit that it is one of my favorites!!

It is a simple dessert to prepare, ideal for a nutritious breakfast, a delicious snack, or even as a dessert after a meal.
Fresh and genuine ingredients, to achieve a result that will win everyone over, young and old.

The version I propose is “with gluten” but obviously, I have also tested the gluten-free baked apple cake, you just have to replace the all-purpose flour with the same quantity of gluten-free cake flour.

Ingredients

  • 3 Golden apples (or others of your choice)
  • 1 1/2 cups all-purpose flour
  • 2/3 cup potato starch
  • 3 eggs (at room temperature)
  • 3/4 cup sugar
  • 7 tbsps butter
  • 1 packet baking powder
  • 1 pinch salt
  • 1 lemon
  • 2/3 cup heavy cream
  • 1 tbsp honey

Steps

Start by preparing the apples, for now 2, peel them and cut them into cubes. Cook them in the microwave at maximum power for 7/8 minutes, then mash them with a fork to almost a puree and set aside. We will use the third apple as decoration on the surface.

Preheat the oven to 356 degrees Fahrenheit.

  • In a large bowl, beat the eggs with sugar until they are fluffy and foamy. Add the grated zest of one lemon and the tablespoon of honey.
    Continue by adding the liquid cream and beat for a couple of minutes.
    Now add the melted and cooled butter and then incorporate flour, potato starch, and baking powder, preferably sifted first.

  • Finally, add the mashed apples and mix well with a spatula or a spoon.
    Slice the remaining apple thinly.

    Pour the mixture into a 8/9-inch pan lined with parchment paper, decorate the surface with apple slices, and sprinkle with a little sugar.

  • Bake at 356 degrees Fahrenheit for about 45 minutes on the center rack of the oven.

    Of course, every oven is different, always check the cake towards the end of cooking and do the toothpick test before removing from the oven.

FAQ

👉As always, I recommend storing the cake well sealed, in a cake holder or under a dome, this will keep it soft for several days.
