Ingredients
- 1 3/4 cups gluten-free cake flour
- 3 eggs (at room temperature)
- 3/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 oranges
- 1 packet baking powder
- 1 pinch salt
Steps
Preheat the oven to 350°F and line a loaf pan with parchment paper.
In a large bowl, beat the eggs with the sugar for a few minutes using an electric mixer; when they are fluffy and frothy, add the pinch of salt and grate the zest of one orange, after washing it thoroughly.
Now squeeze the two oranges and add the juice.
Finally, add the flour and baking powder after sifting them, and mix with the electric mixer.
Pour into the loaf pan and, if you like, add some orange slices on top.
Bake at 350°F for 45 minutes, always do the toothpick test to check doneness. Once baked, let it cool before removing from the pan.
