Notes and Tips

The Lemon Meltaways are fairly large cookies, so if you plan on gifting them, I recommend making a double batch.

For a touch of indulgence, you can also top the cookies with this “Lemon Frosting“:

7.75 oz of vanilla powdered sugar

2.8 oz of Philadelphia
1.76 oz of soft butter

1 teaspoon of lemon zest

Preparation:
Beat the cheese with the butter until they become a soft and homogeneous cream. Then add the powdered sugar and lemon zest. Spread the frosting on the cold cookies.
