Neapolitan fried eggplant sandwiches, stuffed with salami and fiordilatte.

Neapolitan fried eggplant sandwiches
  • Difficulty: Easy
  • Cost: Inexpensive
  • Preparation time: 20 Minutes
  • Portions: 2 people (4 sandwiches)
  • Cooking methods: Frying
  • Cuisine: Italian
  • Seasonality: All seasons

NOTES and TIPS

You can also use other types of cold cuts (cooked ham, mortadella, thinly sliced bacon) and cheeses (provola, scamorza); I also like them filled only with fiordilatte and basil.

In summer, they are also good cold.

Shopping Tips

To prepare this dish, I used this very useful digital thermometer with probe, ideal for desserts, but also for measuring frying oil and meat temperature in the oven or on the grill, you can easily find it on Amazon.

Or you can also use this simpler digital kitchen thermometer without a probe, which you can also find on Amazon: Digital Kitchen Thermometer with Backlight. #adv

My blog is a recipe blog where all recipes are TESTED by me before being posted on the blog. I explain them thoroughly—step by step—so they are FOOLPROOF and flop-proof. These recipes can all be successfully replicated, even by beginners in the kitchen. I don't publish recipes that I have tried and didn't like; I discard them.
