Ingredients for the rolled pizza
- 4 cups all-purpose flour
- 1 1/8 cups water
- 0.28 oz fresh brewer's yeast
- 1 pinch sugar
- 2 tsp salt
- 1 cup tomato sauce
- 1 tbsp tomato paste
- 1 tbsp extra virgin olive oil
- 1 pinch salt
- to taste oregano
- 14 oz mozzarella for pizza
- 2 tbsp extra virgin olive oil

Steps for preparing the rolled pizza
Prepare the dough by working the brewer’s yeast with the flour, water, and lastly add salt and oil. Work until you have a smooth and homogeneous dough. Leave to rise until the volume doubles in a bowl covered with a cloth.
In a bowl, put the tomato sauce. Add salt, oil, and tomato paste. Flavor with either dry or fresh oregano and mix. Cut the mozzarella into cubes.
Once risen, roll out the dough forming a long rectangle. Spread the tomato sauce and cover with the mozzarella cubes. Roll up forming a long sausage. Use scissors to make cuts and drizzle with a little oil. Bake at 340°F for 30-40 minutes. Serve the rolled pizza while still hot.

You can store the pizza in the fridge for a couple of days.
