Cheese Nuggets

Cheese Nuggets are tender inside and crispy outside made very simply with egg whites (leftover from the custard made the other day), grated Grana, and for coloring the dough, a small amount of finely chopped fresh parsley!

They are irresistible; you can’t stop after just one, worse than cherries! I ate a bunch and a heap, gosh!

It’s a last-minute appetizer because it’s so quick, just when guests are in the elevator or on the stairs!

I used Grana cheese that I had bought in abundance because I found great discounts at the supermarket, but if you have mixed grated cheeses, you can use them without any problem.

I love both hot and cold appetizers, and I’d put these on the list with the warm ones, ha ha, but it’s a dish to make and eat right away!

There are a million appetizers on the blog because it’s a course that intrigues me, and it’s so variable that it’s always interesting to try new recipes, and I’ll leave you with some preparations like:

Ingredients

  • 3 egg whites
  • 4.2 oz Grated Grana Padano (or Parmesan or mixed grated cheeses)
  • to taste chopped parsley (optional)
  • to taste vegetable oil (peanut)

Steps

  • 1) It’s not a real recipe; let’s say it’s a fun idea that you can prepare in 5 minutes, so…

    2) in a bowl, I put the egg whites, add the chosen grated cheese, and a bit of fresh chopped parsley.

    3) I mix everything, cover with plastic wrap, and let it rest in the refrigerator for 15/20 minutes to firm up.

    4) This step is not mandatory if you’re in a hurry or if the guests are drumming on the table from hunger, but… if you do it, the cheesy nugget balls will stay more compact!

    5) In a small saucepan with high edges, I put plenty of vegetable oil, and when the temperature is right*, I drop the nuggets with Grana cheese in, letting them brown and roll happily during cooking.

    6) I then place them on special paper towels and serve immediately with a good glass of Pignoletto or a spritz to cleanse the palate from the frying (any excuse is good for a glass of fresh wine or an aperitif)

1) I added parsley, but I didn’t really taste it, so… next cheese nuggets will be made with basil, which I think will give a very pleasant note!
